Ingredients

Butter
  • 2 tbsp butter
Onion and mushrooms base
  • 1 large yellow onion thinly sliced
  • 8 oz cremini mushrooms finely chopped
  • 1 small apple finely diced
  • 1 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 0.5 tsp salt and pepper to taste
Phyllo and cheese
  • 2 can (15 count each) mini phyllo shells 24 used
  • 1 cup shredded Gruyere
  • 0.5 tsp fresh thyme for garnish

Equipment

  • 1 sheet pan

Method

Caramelize the onions
  1. Melt the butter over medium-low heat, then add the thinly sliced onion. Cook 20-25 minutes, stirring often, until the onions are deep golden and jammy.
Cook the filling
  1. Add the finely chopped mushrooms and diced apple to the jammy onions. Cook 6-8 minutes until the mushrooms are browned and the liquid evaporates.
  2. Stir in the fresh thyme leaves and balsamic vinegar. Season with salt and pepper to taste, and cook 1 minute to combine.
Bake the bites
  1. Preheat the oven to 350°F and arrange the mini phyllo shells on a sheet pan. Leave space between shells so they stay crisp.
  2. Fill each phyllo shell with the onion mixture. Top each one with shredded Gruyere.
  3. Bake 8-10 minutes at 350°F until the cheese is melted and the shells look crisp at the edges. Look for bubbling cheese before removing.
  4. Garnish with fresh thyme for garnish and serve the bites warm. Plate immediately for the best crunch.

Notes

For the jammiest filling, keep the heat at medium-low and stir often while caramelizing until the onions look deep golden rather than just softened. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat at 350°F for 6-8 minutes to re-crisp the shells. Freezing isn’t recommended because phyllo can turn soft after thawing. For a lighter option, use part-skim Gruyere or swap in a reduced-fat shredded cheese (the bake time may be similar but watch for smooth melt).
