Equipment

Method

Make and chill the log
  1. Beat the chilled goat cheese log and softened cream cheese until smooth, then shape into a log.
  2. Wrap the log in plastic wrap and chill for 30 minutes, until firm.
Coat with bacon and nuts
  1. Combine the cooked crisp bacon, toasted pecans, chopped dried cranberries, and chopped chives on a plate.
  2. Roll the chilled log in the mixture, pressing to coat on all sides.
Serve
  1. Transfer the coated log to a serving board and drizzle with hot honey.
  2. Serve with crackers.

Notes

For clean slicing, chill the log until firm and use a sharp knife between cuts (wipe the blade if needed). Store covered in the refrigerator up to 3 days; freeze is not recommended because the coating can lose its crunch. For a dairy-light swap, use a lower-fat cream cheese, keeping the same ratios for structure.
