Ingredients

Fresh cranberry orange sauce
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 1 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 orange, peeled and segmented
  • 1 pinch salt

Equipment

  • 1 saucepan

Method

Cook the cranberry base
  1. Bring sugar and fresh orange juice to a boil in a saucepan over medium-high heat, stirring to dissolve the sugar. You should see steady bubbling across the surface within about 2 to 3 minutes.
  2. Add fresh cranberries and salt, then return to a boil. Reduce heat to a simmer and cook for 10 minutes, stirring occasionally, until most berries burst and the sauce looks thickened.
Finish and chill
  1. Remove the saucepan from the heat and stir in orange zest until evenly distributed. The zest should turn glossy in the warm sauce.
  2. Let the sauce cool slightly for 5 minutes so the orange segments stay intact. It should be warm but not hot.
  3. Gently fold in orange, peeled and segmented, using a light hand to avoid mashing the fruit. Stop when the segments are coated and suspended throughout.
  4. Chill the cranberry orange sauce until serving. Refrigerate in a covered container for at least 1 hour to set the texture.

Notes

Pro tip: for a thicker, spoonable sauce, simmer until you see a clear jam-like consistency and burst berries that leave visible skins. Store covered in the refrigerator up to 5 days; re-stir before serving since the sauce can gel. Freezing is not recommended because the orange segments may soften and weep after thawing. Dietary swap: use coconut sugar 1:1 to keep the same sweet-tart balance with a different flavor profile.
