Ingredients

Salmon
  • 1.5 lb salmon skin removed and cut into 1.5-inch cubes
  • 2 tbsp cornstarch
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 2 tbsp olive oil
Hot Honey Glaze
  • 3 tbsp honey
  • 1 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp apple cider vinegar
  • 0.5 tsp red pepper flakes
  • green onions for garnish

Equipment

  • 1 cast iron skillet

Method

Coat the salmon
  1. Toss the salmon cubes with cornstarch, smoked paprika, salt, and pepper until every piece looks lightly dusted. The coating should cling evenly with no dry patches.
Crisp the bites
  1. Heat the olive oil in a cast iron skillet over medium-high heat until shimmering. Add salmon in a single layer and cook undisturbed for 2–3 minutes per side until crispy and golden, then remove from the pan.
Glaze and finish
  1. In the same skillet, mix honey, sriracha, soy sauce, apple cider vinegar, and red pepper flakes. Simmer for 1 minute, watching for a glossy bubbling syrup.
  2. Return the salmon to the skillet and toss to coat in the hot honey glaze, making sure the sauce clings to the browned surfaces. You should see a shiny coat forming on the cubes.
  3. Cook for 1 more minute until the glaze thickens around the bites, leaving a sticky sheen. The sauce should look reduced and lightly clinging rather than runny.
Serve
  1. Garnish with green onions and serve immediately. For best texture, serve hot so the coating stays crisp.

Notes

For extra crispness, don’t move the salmon while it cooks—undisturbed browning is what sets the crust. Store leftovers in the refrigerator up to 2 days; reheat gently in a skillet until warmed, though the coating will be slightly less crisp. Freezing isn’t recommended for best texture. For a lower-sugar option, reduce honey to 2 tbsp and add an extra 1 tsp vinegar to keep the balance of sweet and heat.
