Italian Antipasto Skewers

Ingredients
  

  • 12 small fresh mozzarella balls bocconcini
  • 12 slices salami halved or folded
  • 12 cherry tomatoes red and yellow
  • 12 green olives pitted
  • 12 Kalamata olives pitted
  • 2 tbsp fresh parsley finely chopped
  • 1 tbsp olive oil
  • 1/2 tsp dried Italian herbs or oregano
  • Black pepper to taste
  • Small wooden skewers
  • Fresh rosemary sprigs for garnish, optional

Method
 

  1. Mix olive oil, parsley, dried herbs, and black pepper in a small bowl.
  2. Add mozzarella balls and toss to coat. Let marinate a few minutes.
  3. Thread each skewer: Kalamata olive, cherry tomato, folded salami, marinated mozzarella, green olive.
  4. Repeat for all skewers, alternating colors for presentation.
  5. Arrange on a platter, garnish with rosemary if using. Serve immediately or chill briefly.

Notes

Store leftovers in the fridge up to 2 days. Can be assembled a few hours ahead; drizzle with extra oil and herbs before serving.
