Ingredients

Salmon glaze and seasoning
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 tbsp soy sauce
  • 0.25 salt to taste
  • 0.25 pepper to taste
  • 1 fresh thyme for garnish
Salmon and roasted vegetables
  • 4 salmon fillets 6 oz each
  • 2 cup Brussels sprouts, halved
  • 1 sweet potato, cubed
  • 2 tbsp olive oil

Equipment

  • 1 sheet pan

Method

Roast the vegetables
  1. Preheat oven to 400°F and toss Brussels sprouts and sweet potato with olive oil, salt, and pepper on a large sheet pan until evenly coated, leaving them in a single layer for browning.
  2. Roast at 400°F for 10 minutes to start caramelizing the cut sides.
Glaze and finish cooking
  1. Mix pure maple syrup, Dijon mustard, whole grain mustard, and soy sauce until smooth and glossy.
  2. Push vegetables to the sides, place salmon fillets in the center, and brush salmon generously with maple Dijon glaze so it clings to the surface.
  3. Roast at 400°F for 15–18 more minutes, until salmon is cooked through and vegetables are caramelized, with the glaze looking glistening and slightly sticky.
  4. Garnish with fresh thyme and let sit for 2 minutes before serving for cleaner slices and better glaze set.

Notes

Pro tip: brush the glaze on during the second roast so it caramelizes without burning, and keep vegetables spread out for more browned edges. Store leftovers in an airtight container in the fridge up to 3 days; reheat gently. Freezing is not recommended due to texture changes in the roasted vegetables. For a lower-sugar option, use a sugar-free maple syrup substitute in the glaze (keep the Dijon and soy sauce amounts the same).
