Freeze and blend
- Freeze the frozen strawberries until completely solid, at least 2 hours, so they blend into an airy soft-serve texture. Visual cue: the berries should look rock-solid with no give when pressed.
- Blend the frozen strawberries in a high-powered blender or food processor, starting on low and increasing speed. Visual cue: in 30–60 seconds it should turn into a pale pink, thick snow-like base.
- Add coconut cream (or heavy cream), honey (or maple syrup), lemon juice, vanilla extract, and salt while blending. Blend until completely smooth and fluffy, stopping to scrape down the sides as needed, about 1–3 minutes total. Visual cue: the mixture becomes thick, creamy, and glossy like soft serve.
- Check thickness and adjust if needed by adding 1–2 tablespoons more cream and blending briefly to combine. Visual cue: it should hold swirl shape and look like strawberry soft serve rather than a pourable sorbet.
Pipe and serve
- Transfer the mixture to a piping bag fitted with a large star tip. Visual cue: the mixture should be stiff enough to pipe clean ridges.
- Pipe into cups or cones in a tall swirl and serve immediately, then garnish with fresh strawberries. Visual cue: the swirl should stand high and the surface should glisten as you finish plating.
Notes
For the fluffiest strawberry Dole Whip, freeze the strawberries flat in a single layer so they freeze evenly. Store leftovers covered in the freezer up to 2 days; let sit at room temperature for 5–10 minutes to soften before re-scooping (texture won’t be as airy as fresh). Freeze again is not recommended because it can crystalize. For a true dairy-free soft serve, use full-fat coconut cream and maple syrup; for a more classic copycat taste, use heavy cream and honey.
