Ingredients

Salmon fillets
  • 4 salmon fillets 6 oz each
Chili lime paste
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest packed
  • 1.5 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne
  • 0.25 tsp salt to taste
Garnish
  • 1 lime wedges
  • 1 fresh cilantro

Equipment

  • 1 cast iron skillet

Method

Make the chili lime paste
  1. Mix fresh lime juice, lime zest, olive oil, chili powder, smoked paprika, cumin, garlic powder, cayenne, and salt into a paste, stirring until it looks evenly blended and clay-like.
Coat and sear (or bake)
  1. Coat the salmon fillets all over with the chili lime mixture until every surface is covered with a golden-red layer.
  2. Heat a skillet over medium-high heat and sear the salmon for 4–5 minutes per side, until the spice crust is golden and slightly charred.
  3. Alternatively, preheat the oven to 425°F and bake the salmon for 12–14 minutes until the spice coating looks set and fragrant with lightly browned edges.
Finish and serve
  1. Garnish with lime wedges and fresh cilantro right before serving for a fresh, bright finish.

Notes

For the most even charred crust, pat the salmon dry and apply the paste in a thick, even coat. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a skillet or oven until warmed through. Freezing is not recommended because the crust texture softens after thawing. For a lower-heat option, reduce or omit cayenne while keeping the same chili powder and paprika balance.
